Heavenly Vanilla Cream Pie

Ingredients PIE CRUST: 1 1/4 cups all-purpose flour 1/4 teaspoon salt 2 tablespoons shortening (chilled) 4 tablespoons cold butter 5 tablespoons ice water

FILLING: 2 cups milk 2/3 cup sugar 1/4 cup cornstarch 1/4 teaspoon salt 3 egg yolks 1 teaspoon vanilla

MERINGUE TOPPING: 3 egg whites pinch of salt 6 tablespoons powdered sugar 1/8 teaspoon cream of tartar

Directions To prepare the crust for this pie, go to the Single Pie Crust recipe. Before adding filling, bake pie crust for 30 minutes per Single Pie Crust guidelines.

FILLING: In a medium saucepan, combine milk, sugar, cornstarch, salt, and egg yolks. Stir ingredients until combined, then boil and thicken over medium heat.

Stir the mixture while heating to avoid pan burn. After boiling or thickening, add vanilla and remove from heat.

Mix well and pour into the prepared pie shell. Set aside while creating meringue.
